1/2 pound mushrooms
1/4 cup brown rice
1 cup celery
1 cup carrots
2 cups of water or chicen broth low sodium
1/2 tsp pepper
1 tsp dried sage
3/4 cup of greek yogurt
8 boneless skinless breasts 2.5 pounds (20 oz)
Cook chicken in a large sillet until brown and set aside.
Preheat oven to 375. Mix all ingredients except chicken and put into a casserole dish. Sit the chicken breast on top of the rice mixture and bake for 25 to 30 minutes or until the chicken is no longer pink inside.
