Blackened Chicken With Avacado Sauce


1/2 cup Quinoa
1/2 tsp Cumin
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Paprika 1/2 tsp
Black Pepper 1/2 tsp Red Pepper
1/2 avocado
1/4 oz Lemon Juice
1 cup Spring Onions
1/4 tsp Sea Salt
1 cup Low Sodium Organic Chicken Broth
1 chicken breast


Place quinoa in a pot after the chicken broth has come to a boil, simmer on low for 20 minutes and add scallions. Mix all spices together and rub all over chicken breast. Spray Pam on a frying pan and cook chicken on medium heat for about 10 minutes on each side. Mix greek yogurt, lemon juice, garlic powder and avocado together to make the avacad3o sauce. Put chicken on bed of quinoa with the drizzle of sauce on top.
