Blueberry Bran Protein Muffins


1 cup soy flour
1 cup quick oats
1 cup natural bran flakes
1/2 cup whole wheat flour
1/2 cup ground flax
1 tsp baking soda
2 tbsps cinnamon
1 cup egg whites
1% low-fat milk
3/4 cup low-fat plain yogurt
1/4 cup honey
1 cup blueberries (frozen)


Spray a muffin pan with non-stick cooking spray.Combine all ingredients in a large bowl.  Add berries and mix until just combined.. Fill muffin cups equally and bake for 20 minutes at 400 degrees. Remove from oven and cool.
