Power Eggs



  • 4 jumbo or extra large organic eggs
  • ½ a red onion chopped
  • 1 cup cubed yellow squash
  • 4 mini sweet peppers
  • 2 cups chopped lacinato kale
  • ½ cup frozen wild blueberries (or fresh in season)
  • 1 medium ripe avocado
  • 1 tablespoon coconut oil
  • Garlic salt and black pepper to taste


1. Rinse and chop all the vegetables

2. Heat the coconut oil in a large non-stick skillet and Add chopped veggies

3. Sauté until soft

4. One minute before you add the eggs, add the blueberries, garlic salt, and black pepper.

5. Add eggs and  scramble with veggies

6. Cook until the eggs are firm

6. Plate with sliced avocado.



Chocolate Banana Muscle Gain Pancakes


  • 2 Scoops of Muscle Gain Chocolate Protein Powder
  • 1/2 Teaspoon of Baking Powder
  • 1 Banana
  • 4 Tablespoons of Almond Milk
  • 2 Eggs



  • In a mixing bowl, combine all dry ingredients together with a whisk.
  • In a separate bowl, combine the egg, banana and almond milk.
  • Gently pour the wet ingredients into the dry ingredients while mixing with a rubber spatula until just combined. Do not over-mix.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4-cup rounds of batter onto the skillet, and cook until bubbles appear on the surface, about 3 minutes. Flip with a spatula, and cook for another 2-3 minutes.

Serving Size: 5 small pancakes

Blueberry Bran Protein Muffins


1 cup soy flour
1 cup quick oats
1 cup natural bran flakes
1/2 cup whole wheat flour
1/2 cup ground flax
1 tsp baking soda
2 tbsps cinnamon
1 cup egg whites
1% low-fat milk
3/4 cup low-fat plain yogurt
1/4 cup honey
1 cup blueberries (frozen)


Spray a muffin pan with non-stick cooking spray.Combine all ingredients in a large bowl.  Add berries and mix until just combined.. Fill muffin cups equally and bake for 20 minutes at 400 degrees. Remove from oven and cool.
